The recipe combines ground venison with smoky spices and a touch of jalapeno cheddar, all nestled within a savory sausage roll. Add diced potatoes and tangy kraut and you’ve got a complete meal!

Lights-Out Venison Kielbasa, Sauerkraut, and Potatoes

This year during a winter snow and ice storm we had a power outage for almost a full week. We hunkered down to stay warm and had to get a little creative to cook.
Thankfully, we had purchased a propane fish fryer earlier in the year to fry morel mushrooms and, of course, fish. What we didn't realize is how useful it would be during the prolonged power outage.
Using our Bayou Classic propane fish fryer, a Lodge cast iron skillet, some venison kielbasa from last fall’s deer harvest, and other ingredients on hand, my husband and I whipped up this simple but delicious venison kielbasa recipe. It’s a lights-out dish whether your electricity is on or off!
Ingredients
- 1 lb venison kielbasa (we used jalapeno cheddar venison kielbasa)
- 1 onion, diced
- 2-3 large russet potatoes, diced
- 16 oz. sauerkraut (we used a refrigerated package from Cleveland Kitchen, and it was fantastic.)
- Redmond Organic Season Salt, to taste
- Redmond Organic Garlic Pepper, to taste
- 2-3 Tbsp. olive oil
Instructions
- Slice your venison kielbasa sausage. If it's not pre-cooked, make sure to brown it first, then add to potatoes and onions to finish cooking.
- Adjust the temperature on your cooker to around medium heat.
- Add olive oil to a cast iron pan.
- Once pan and oil are heated, add your onions, and potatoes. Sprinkle with Redmond Real Salt to desired taste.
- Cover skillet with a lid or foil to help the potatoes cook and soften.
- Once the potatoes are soft but still a little firm, add your kielbasa sausage to help it cook the rest of the way while the potatoes finish cooking. (This doesn’t take long; just a few minutes.)
- Add sauerkraut and cook until heated through.
- Finish with a little more Redmond Season Salt and fresh Garlic Pepper and you're good to go!
